Serving quail jelly, snail porridge and bacon and egg ice cream, PSU's client The Fat Duck at Bray has recently been named the best restaurant in the world. It was one of 14 UK eateries competing in The World's 50 Best Restaurants 2005 awards, hosted by Restaurant magazine.
